Crock Pot Cuban Chicken Chili
[inspired by Skinnytaste’s Crock Pot Chicken Taco Chili]
1 can Trader Joe’s Cuban Style Black Beans
1 can diced tomatoes, no salt added
1 8-ounce can tomato sauce
3/4 cup Trader Joe’s Fire Roasted Corn, frozen
1/2 packet Trader Joe’s Taco Seasoning
9 [approximately 12 ounces] chicken tenderloins

- Pour the black beans, diced tomatoes, tomato sauce, corn, and taco seasoning into the crock pot. Stir until all the ingredients are combined.
- Lay the chicken tenders on top of the mixture and cover.
- Set the crock pot to low and cook for approximately 10 hours [a little longer won’t hurt].
- Using a fork, shred the chicken and stir everything together.
- Serve!
***Many of the ingredients used were purchased at Trader Joe’s but feel free to substitute with similar ingredients!***
Next time, Ryan suggested that we toss in some bell peppers… I thought that sounded great but think stuffed bell peppers sound even better!
