Crock Pot Cuban Chicken Chili

Pinterest is a wonderful pastime.  Bored?  Go pin!  Need a dose of inspiration?  Go pin!  Too bad I have almost 2,000 pins and have hardly baked/ cooked/ shopped for/ made any of them…  Until tonight 😉


Crock Pot Cuban Chicken Chili

[inspired by Skinnytaste’s Crock Pot Chicken Taco Chili]

1 can Trader Joe’s Cuban Style Black Beans

1 can diced tomatoes, no salt added

1 8-ounce can tomato sauce

3/4 cup Trader Joe’s Fire Roasted Corn, frozen

1/2 packet Trader Joe’s Taco Seasoning

9 [approximately 12 ounces] chicken tenderloins


    1. Pour the black beans, diced tomatoes, tomato sauce, corn, and taco seasoning into the crock pot.  Stir until all the ingredients are combined.
    2. Lay the chicken tenders on top of the mixture and cover.
    3. Set the crock pot to low and cook for approximately 10 hours [a little longer won’t hurt].
    4. Using a fork, shred the chicken and stir everything together.
    5. Serve!

***Many of the ingredients used were purchased at Trader Joe’s but feel free to substitute with similar ingredients!***

Next time, Ryan suggested that we toss in some bell peppers…  I thought that sounded great but think stuffed bell peppers sound even better!
