A Sore Throat & Tasty Eats

Good morning!  Ryan and I have been up since 6AM taking care of Charlie because he had his first crate accident that required his first bath- he’s such a little rat without his fluffy fur!   We have plans to see the morning showing of “The Girl with the Dragon Tattoo” and to meet a friend for lunch so I thought I’d share a quick recap of some of my eats from the past week…

Pumpkin Pie Crunchy Oats

1/3 cup oats

1 cup water

1/4 cup Silk Light Vanilla

Pumpkin pie spice


Kashi Go Lean

Nature’s Path Flax Plus Pumpkin Raisin Crunch

Pumpkin puree

Combine the first five ingredients into a pot and cook on the stove until thick.  Add the remaining ingredients on top and mix in.

Soup and Egg Scramble

Fishes and Puffins Mix

Whole Grain Goldfish

Peanut Butter Puffins

Kashi Go Lean


Crock Pot Chicken Soup

3 stalks of celery

3 large carrots

1 onion

1 pound chicken tenders

4 cups chicken broth



1/2 cup TJ’s Fire Roasted Corn

Chop celery, carrots, and onion.  Add chopped vegetables and the other first 7 ingredients to crock pot.  Cook on low for approximately 6-8 hours.  Remove chicken tenders from pot and use two forks to shred.  Add shredded chicken back to pot and add corn.  Cook for another 15 minutes.

Italian Eggs

2 egg whites

1 slice Canadian Bacon

1 teaspoon Parmesan cheese


Red pepper flakes

Tomato sauce

Pour egg whites into a pan.  Add Canadian bacon to one half, Parmesan cheese to other half.  Sprinkle eggs with oregano and red pepper flakes and fold in half.  Cook for 1-2 minutes; flip eggs and cook for another 1-2 minutes.  Top with tomato sauce.

Pumpkin Pie Whole Wheat Brancakes with Pumpkin Pie Cottage Cheese

2 tablespoons oat bran

2 tablespoons whole wheat flour

2 egg whites

1/4 teaspoon baking powder

Pumpkin pie spice


Water [to desired thickness]

Combine all ingredients.  Spoon batter into a pan to form ‘cakes and cook for 3-5 minutes.  Flip ‘cakes when they begin to bubble and cook for another 2 minutes.

1/4 cup cottage cheese

1/4 cup pumpkin puree

Pumpkin pie spice


Combine all ingredients and serve.

P.S.  Did you know that toy poodles and teacup poodles are the same thing?!  There are three types of poodles: standard, miniature, and toy.  A teacup poodle is just the smallest type of toy poodle- less than nine inches in height and weigh less than six pounds.

      Thanks 🙂 It was a fluke… I tried it a while back because we ran out of salsa [my usual topping] and have been doing it since!

    having a puppy must be some work, but definitely so fun!! i am a little bit jealous! 😀

      Thanks! I’ve been using parm on anything lately 😛 Haha, he is def a pup full of pep and a handful at times but totally worth it!
